Chicken & Chorizo scotch egg, patatas bravas,  garlic bread

Ingredients

Happy Belly Chicken & Chorizo scotch eggs

Patatas bravas
Large maris piper potatoes

Olive oil
1 tbsp
Small onion
1
Garlic cloves, crushed
2
Chopped tomato
1/2
Red pepper
1
Sweet smoked paprika
1 tsp
Chilli flakes
1/2 tsp
Sugar
1 tsp
Garlic bread

The Method

1.

Bake the potatoes in the oven until tender.

2.

Split in half and scoop out the flesh into chunks and keep.

3.

Fry in butter or deep fry.

4.

Season with salt and keep warm.

5.

Pre-heat the oven to 200C (Fan) and re-heat the scotch eggs on a tray in the middle of the oven for 12-15 mins.

For the sauce, soften the onions, peppers and garlic in olive oil.

7.

Add the chilli and paprika.

8.

Add the chopped tomatoes and thyme and simmer for 5 mins.

9.

Puree and season with salt and pepper.

10.

Serve with the potatoes, some freshly baked garlic bread.

Top tip Slice the scotch eggs into thin wedges, sprinkle with cheese and bake like nachos. When the cheese has melted, load up with salsa and sour cream for a Weekend Tex Mex supper.
